A poussin is principally a younger chicken, although due to being grown on corn, our corn fed poussin has all the flavour of a traditional chicken whilst benefiting from younger more tender meat.

Chef’s Tip: place a citrus fruit in the cavity of the poussin, such as half a lemon, to keep the cavity open whilst cooking. The juices that render in the pan will have a hint of sourness; reduce and brush over the skin of the poussin before tucking in.
